  • Vegan Shiitake and Dumplings is so easy it can be made in 30 minutes. Topped with sautéed shiitake mushrooms, this dish will soon become a comfort meal of choice.

    INGREDIENTS

    1/2 lb. Fresh Shiitake sliced (hydrate .8 oz. if dried)

    1/8 cup all-purpose flour

    1 tsp. Vegetable Oil

    2 medium Carrots, Diced

    1 Stalk Celery, Diced

    1 whole Yellow Onion, Diced

    1 cup Frozen peas

    1/3 tsp Salt

    1/4 tsp Fresh Black Pepper

    1 clove Garlic, Minced

    1 tsp dried Thyme

    1/2 (5.5 oz.) can Coconut Milk

    1 cube Vegan Bouillon (or vegan vegetable broth of choice)

    1/2 cup all-purpose flour (for dumplings)

    1/2 tsp Baking Soda

    • Coat mushrooms with 1/8 cup flour and pinch of salt and black pepper. Sauté mushrooms until lightly browned and crisp. Set aside.

    • Saute’ carrot, celery, onion, garlic, and pinch of salt until softened. Add bouillon, coconut milk, thyme, and 1 cup of water. Bring to boil, reduce heat, and let simmer until thickened.

    • In a separate bowl, mix 1/2 cup flour, 1/2 cup water, and 1/2 tsp baking soda. Drop spoonsful into simmering sauce and cook until firm.

    • Add peas to sauce and cook until tender.

    • Serve in bowls with crisp shiitakes layered on top. Enjoy!

  • Heat plant based milk in a pot over the stove.

    Place the hot milk in a blender. Add a serving (one Tbsp or one gram) of lion's mane powder into the blender.

    Add sweetener (optional)

    Blend thoroughly

    Pour into a mug.

    Sprinkle of cinnamon

    Enjoy!

  • Boil hot water in pot over stove.

    Place hot water and a serving of lion's mane (one Tbsp or one gram) in a cup.

    Add lemon, ginger, or cinnamon (optional)

    Stir thoroughly or blend

  • Ingredients

    1 Tbsp Shiitake powder

    5 medium potatoes

    1/4 cup chopped cashews

    2 Tbsp chopped fresh rosemary

    2 Tbsp olive oil

    2 cloves minced garlic

    2 pinches salt

    2 pinches Black pepper

    Cooking Instructions

    Cut the potatoes into wedges

    Add oil, potatoes, and shiitake powder to a frying pan and sauté until lightly brown.

    Add the salt, minced garlic and cashews and continue cooking until garlic is lightly browned.

    Add the rosemary and briefly toss everything together.

    Springle with black pepper to taste.
