In less than two years, Chapel Hill Mushrooms, LLC, owned and operated by Patty and Joe Saponaro, has become the most sustainable sheltered mushroom farm on the planet.  Only outdoor forested farms grow mushrooms with a smaller carbon footprint.  By using multiple nested greenhouses insulated with soap foam, the farm operates year-round without the need for buildings or heating and air conditioning.  Schedule your visit to see this unique approach to sustainable mushroom cultivation. 

Committed to serving local stores, restaurants, and farmers markets, we also share this patented system with anyone interested in producing their own culinary mushrooms.  This low-cost starter system, scalable from 200 pounds a week to over 1,000 pounds, encourages small local farmers to add mushrooms to their crop list in an affordable way.  In addition to building and HVAC cost savings, the system saves on land costs, each system requiring only 200 square feet of space.
